London Broil

London broil is a North American beef dish made by broiling or grilling marinated beef, then cutting it across the grain into thin strips. How it was named is somewhat of a mystery for the dish is unknown in the city of London, England. Different cuts of meat may be labeled as "London broil", but the term does not refer to a specific cut of meat rather a method of preparation and cookery. The preparation of London broil typically involves marinating the meat for several hours followed by high heat searing in an oven broiler or outdoor grill. If cut and used for sandwiches, the meat is usually more rare than traditional roast beef. Our London Broil is made on site from closely trimmed USDA "Choice" or better top sirloin.
