Mortadella

If Italy's most famous meat is Prosciutto, their second most famous meat very well could be Mortadella. This cooked Italian sausage is the ancestor to the common American "baloney". It is made with lightly seasoned Italian pork and pork products, and flavored with spices including whole or ground black pepper, myrtle berries, and pistachios.
